Georgette is a traditional estaminet (a cosy Northern French inn) and brasserie located at 13 rue Saint-André, in the heart of Old Lille (Vieux-Lille). The house is the little sister of the well-known restaurant Au Georges V and serves generous Northern French food, including its signature homemade welsh — toasted country bread topped with cheddar melted in local triple beer, ham and an egg.

What is a "welsh"?

A welsh is the iconic comfort dish of Northern France and the Lille region: cheddar melted with beer and mustard, poured over toasted bread, usually topped with ham and a fried egg, and served with fries and salad. At Georgette it is made in-house, with a local triple beer. A vegetarian version is also on the menu.
